Zucchini Eyeball Pizzas

Vegetarian  |  Clean Eating 

Ingredients

  • Zucchinis, sliced into 1/4 inch rounds
  • 1 jar Rao's marinara sauce
  • Mozzarella cheese finely shredded
  • Sliced black olives

Instructions

  1. Preheat oven to 400 degrees. Line baking sheet with foil and spray liberally with Pam cooking spray.

  2. Wash and slice zucchinis into 1/4-inch-wide round slices. Press with paper towels to remove excess water from slices.

  3. Lay on foil-lined book sheet and top each zucchini with 1/4 tsp to 1/2 tsp marinara sauce.

  4. Sprinkle with mozzarella cheese.

  5. Place 1 sliced black olive in the center of each "eyeball."

  6. Bake in preheated oven about 10 minutes, until cheese is melted and zucchini is cooked. (It will start to turn translucent as it cooks.)
