Healthy Pumpkin Spice Latte Smoothie

Ingredients

  • 1 banana frozen
  • 1/2 cup frozen riced cauliflower
  • 1/2 cup plain nonfat Greek yogurt
  • 1/4 pure pumpkin purée (not pumpkin pie filling)
  • 1 Tbsp cashew butter
  • 1 Tbsp ground flaxseed
  • 2/3 cup cold-brew coffee concentrate or strong brewed coffee (cooled)
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp pure maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Add all ingredients to high-speed blender or food processor and blend.

  2. Top with chopped pecans or maple granola and enjoy!
