Sometimes … you just want cookies for breakfast. If you’re my children, you always want cookies for breakfast.

In my house, we compromise with a smoothie bowl that tastes like cookie dough — but is clean, high in protein, and low in sugar for the best start to the day.

The cookie flavor comes from the combination of rolled oats, cinnamon, creamy cashew butter, and Watkin Butter Vanilla flavoring. I always use cashew butter in smoothies when I’m mimicking baked goods because I think cashew butter has the richest, butteriest taste and it pairs perfectly with cinnamon for that fresh-baked cookie taste and smell.

A combination of raw cacao nibs and just a teaspoon of mini chocolate chips adds cookie crunch and chocolate taste without overloading the recipe with sugar. A peanut butter swirl is figurative icing on the cake to add a little more protein and a pop of flavor. You can feel good about letting your kids have this one before school, or starting your own morning off right.

Healthy Cookie Dough Smoothie Bowl

Clean | High-protein | Gluten-free | Low-sugar

Servings 1

Ingredients

  • 1 large banana
  • 1/2 cup plain Greek Yogurt
  • 1/4 cup rolled oats (gluten-free to make recipe GF)
  • 1 Tbsp creamy cashew butter
  • 1 tsp Watkin Butter Vanilla flavor
  • 1/2 tsp cinnamon

Toppings

  • 1 tsp chia seeds
  • 1 tsp raw cacao nibs
  • 1 tsp Enjoy Life semi-sweet mini chocolate chips
  • 1 tsp PBFit powder mixed with 1 tsp water

Instructions

  1. In a blender or food processor, add banana, yogurt, rolled oats, cashew butter, butter vanilla flavor, and cinnamon.

  2. Blend on high until smooth consistency is achieved. You’ll probably need to scrape down the sides once or twice because this mixture is sticky.

  3. Top with sprinkling of chia seeds, raw cacao nibs, and mini chocolate chips.

  4. In small bowl, mix 1 tsp PBFit powder with 1 tsp water to form a thin sauce. Drizzle PBFit sauce on top of smoothie bowl and enjoy.

Recipe Notes

  • To achieve the sticky cookie dough texture, use a room temperature banana instead of frozen, and don’t add ice cubes.
  • If you’re a smoothie bowl purist and need it frozen, it tastes great with frozen banana too.
  • Make sure your rolled oats are gluten-free if you are keeping this recipes GF.
  • If you don’t want to purchase Watkin Butter Vanilla flavor, you can also use a combination of vanilla extract and butter extract, or even omit the butter flavoring altogether and stick with plain vanilla extract.
  • My favorite cashew butter is Trader Joe’s Creamy Cashew Butter.
  • If you’re not a fan of cashew butter, you can substitute peanut butter or almond butter in this recipe as well.
  • Peanut butter powder is used sparingly to create a drizzling sauce; if you are looking for a cleaner, no-added-sugar alternative, you can use natural (no sugar added) peanut butter warmed in the microwave and thinned by whisking a teaspoon or two of milk.
