Cake flavors. I’m on the fence about it. I’d much rather have classic vanilla than something like strawberry or orange cream. But there’s something about the delicate sweetness of lightly almond-flavored traditional wedding cake that I love. So when I was brainstorming ways I could incorporate booze into a smash cake to celebrate my one-year blogiversary, Amaretto almond liqueur popped into my head and I was head over heels.

The boozy creation that resulted has liqueur in every single element, from the cake to the flavor syrup to the ganache to the frosting. The flavor is mellow and sweet and smooth, but while you won’t get drunk off it, you might get the tiniest buzz!

Because I was celebrating the blog, I turned this confection into a purple ombre layer cake with fancy sprinkles and a shiny ganache topping. It was #NeverDoneWithFun purple perfection.

But this recipe would be elegantly beautiful if frosted smooth with the amaretto buttercream and topped with a white chocolate-amaretto ganache drizzle and chocolate-covered almonds. (I couldn’t get the drip technique quite right, so I guess that means I’ll have to practice until it’s perfect.) It would also translate beautifully into cupcakes — perfect for a bridal shower!

Boozy Amaretto Layer Cake Components:

  • Amaretto cake layers (food coloring optional)
  • Amaretto simple syrup
  • White chocolate-amaretto ganache
  • Amaretto buttercream

A layer cake requires a bit of time, so this busy working mom made her cake in stages: baking, cooling, cutting and brushing syrup on the cake layers one day; making the ganache, stacking and filling the layers the next day; and frosting and decorating it the third day. I simply kept the cake in the freezer in between steps, which was particularly helpful for ganache filling, crumb coating, and smooth frosting.

Let me tell you, it still tasted just as good as I imagined it would. In fact, when I tasted it for the first time (off my frosting-covered hands for the cake smash), I yelped delightedly, “Oh this is GOOD!” My photographer laughed and said, ‘Well, of course it is, you made it, didn’t you?”

But really, if ever there was a cake to devour with your hands and smush your face into, a boozy Amaretto-infused buttercream layer cake masterpiece is the way to go.

Amaretto Almond Buttercream Layer Cake

Boozy grownup layer cake with Disaronno Amaretto liqueur in every bite | Recipe makes a 5-layer 6-inch cake or a 3-layer 8-inch cake

Ingredients

Amaretto Almond Cake

  • 1 2/3 cups Swanson's Cake Flour
  • 3/4 cup blanched almond flour, finely ground
  • 2 tsp baking powder
  • 3/4 tsp Himalayan pink sea salt (finely ground)
  • 3/4 cup butter, softened (Liv for Cake recipe calls for unsalted, but I only had grass-fed salted in the house – turned out rich and decadent)
  • 1 1/2 cups granulated sugar
  • 3 large eggs room temperature
  • 1 1/2 tsp pure vanilla extract
  • 3/4 cup milk room temperature
  • 1/4 cup Disaronno Amaretto liqueur

Amaretto Simple Syrup

  • 1/3 cup granulated sugar
  • 1/5 cup water
  • 1/5 cup Disaronno Amaretto liqueur

White Chocolate-Amaretto Ganache

  • 7 oz Ghiradelli white chocolate melting wafers (roughly chopped for quicker melting)
  • 1/2 cup heavy whipping cream
  • 1/2 cup Disaronno Amaretto liqueur (may reduce to 1/3 cup for slightly less potent ganache)
  • 1 Tbsp salted butter

Amaretto Buttercream Frosting

  • 2 sticks salted butter, softened
  • 1/4 cup heavy whipping cream (may add up to 3 T. additional to achieve desired consistency – I used 1/4 cup + 3 T. in total)
  • 4 cups confectioners (powdered) sugar, packed
  • 2 Tbsp Disaronno Amaretto liquor

Instructions

Amaretto Almond Cake

  1. Preheat oven to 350 degrees. Liberally spray five 6-inch cake pans with nonstick cooking spray.

  2. In a medium bowl, whisk together cake flour, almond flour, baking powder, and salt until combined. Set aside.

  3. Combine milk and Amaretto. Set aside.

  4. In stand mixer or another medium bowl, cream together butter and sugar on medium=high speed until pale and fluffy, about 3 minutes.

  5. Reduce mixer speed to medium-low and add eggs one at a time, fully mixing each egg before adding the next. Add vanilla after all eggs are incorporated.

  6. Add one-third of flour mixture into stand mixer on medium speed and blend to fully incorporate.

  7. Add one-half of milk/Amaretto mixture and continue mixing to fully incorporate. Milk mixture may appear to slightly separate the butter; mixing will take care of this.

  8. Continue to alternate adding one-third flour mixture, remaining half of milk/Amaretto mixture, and final one-third of flour mixture, fully combining before adding the next mixture, to form a smooth sticky batter.

  9. Evenly divide cake batter among five baking pans. (Or three, if you are making an 8-inch cake).

  10. For best results, use a kitchen scale to weight the batter for layers that bake more evenly and flat on top. The Evenbake cake strips wrapped around 8-inch cake pans works miracles for layers that come out of the oven flat! Unfortunately the strips are too large to be effective for the 6-inch pans.

  12. Bake on top rack of oven for 28-30 minutes or until a toothpick inserted in the center comes out clean.

  13. Cool in pans on a wire rack for 10 minutes, then invert and remove from pans to cool completely before trimming and brushing with amaretto simple syrup.

Amaretto Syrup

  1. Add water and granulated sugar to a small pot on the stovetop. Bring to a boil, then reduce heat and simmer 2 minutes, stirring constantly.

  2. Remove from heat and stir in Amaretto. Cool completely.

  3. While syrup is cooling, trim tops of cake layers slightly so cakes are even and flat. Remove all "crust" to allow better absorption of the amaretto syrup. This keeps the cake moist and adds extra almond flavor.

  4. Use a silicone brush to liberally brush each cake layer with amaretto syrup. Layers should appear moistened and shiny.

  5. Place parchment paper between cake layers and freeze at least 30 minutes before assembling the cake layers with the ganache filling.

White Chocolate-Amaretto Ganache

  1. Place roughly chopped white chocolate (or white chocolate chips) into heat-proof bowl. In a small pot on the stovetop, heat heavy cream and Amaretto liqueur together until just boiling.

  2. Remove from heat and pour cream mixture over the chocolate. Leave to stand for 5 minutes, then stir or whisk briskly until smooth.

  3. Add softened butter and stir again until butter is fully melted and combined and the ganache is smooth.

  4. Allow the ganache to cool until it is thickened (I placed mine in the freezer for 30 minutes to expedite the thickening.)

  5. Remove the cake layers from the freezer and discard the parchment paper between layers. Place bottom cake layer onto parchment paper on a cardboard cake circle, and then pour 1/4 cup ganache onto layer.

  6. Allow ganache to spread to cake edges; dripping down the sides is inevitable depending on the thickness of your ganache.

  7. Add next cake layer and repeat. Do not press cake layer down; allow them to rest lightly on top of one another.

  8. Repeat until cake is stacked with 1/4 cup ganache between each layer. Use 1/4 cup ganache on top of cake; set aside remaining ganache (this will be used for the final topping).

  9. If cake layers are sliding askew instead of staying in place (the ganache is thinner than frosting, especially when warm), use wooden skewers to secure cake layers evenly in place.

  10. Return cake to freezer for at least 1 hour, until ganache is thickened to a solid.

Amaretto Buttercream

  1. In stand mixer (with clean bowl), cream together butter with 1/4 cup heavy whipping cream.

  2. Add powdered sugar 1/2 cup at a time, until 4 cups are incorporated. Mixture will be stiff.

  3. Add 2 tablespoons of Amaretto and continue to mix. If frosting is still too stiff, add up to 3 tablespoons additional heavy cream until desired consistency is achieved. I like my frosting fluffy and soft because I find easiest to work with, so my recipe ended up using 1/4 cup + 3 tablespoons whipping cream in total.

Frosting the Cake

  1. Remove the ganache-covered cake from the freezer and remove skewers if necessary. Cake will be frozen in place and layers will no longer slip.

  3. Apply thicker crumb coating to top of cake. Don't worry if frosting mixes with ganache. You'll cover the top with an additional layer of frosting. Just apply enough frosting to coat entire top and sides smoothly.

  4. Return to freezer for 15 minutes. Tint remaining frosting with food coloring to achieve desired color. I used approximately 1/4 tsp Americolor Soft Gel Electric Purple for 3 cups of frosting.

  5. Use spatula to frost sides of cake and smooth with icing smoother, wiping excess frosting from smoother in between passes. You may need to add additional frosting and smooth several times to achieve the frosting coverage and appearance desired.

Make It a Sprinkle Cake

  1. To add sprinkles, apply with your hands, flat palm to gently push the sprinkles into the frosting.

  2. Rotate cake and continue pressing sprinkles into frosting until desired coverage is achieved. Gently brush off excess sprinkles and reapply as needed.

Finishing Touches

  1. Add 1/3 cup frosting to a piping bag outfitted with a star tip. (If you're frosting the cake in color, you may want to add additional food coloring to deepen the color of this frosting for contrast.) Pipe stars around the perimeter of the cake, making sure stars touch and do not leave gaps. This will act as a barrier to contain the final ganache.

  2. If desired, tint remaining ganache. Ganache may need to be microwaved for 10 seconds to return it to a more pourable consistency. Pour ganache over the top of the cake and allow it to spread to the frosting stars.

The ombre layers turned out prettier than I anticipated — I wish you could see the colors better in the cake smash photos! My only regret is that the purple wasn’t as violet as I had hoped … it was more of a lovely shade of mauve. I realized this is because I used egg yolks in the cake – the yellow offset the purple food coloring to produce a warmer hue. If you are dead-set on a violet cake, you may want to use 4 egg whites instead of 3 full eggs.
