It’s before 9 a.m. on a Sunday morning and I’ve already worked out — outside in 80 degree heat — and my kids are waiting for me by the back door, ready to go outside and “do yard work” (code for “get muddy and wet in the garden”) when I get home.
But honey, Mommy hasn’t even had her coffee yet…
For an on-the-go breakfast that refuels my body and gives me a little extra jolt of energy to jumpstart the day, this power smoothie is it. Packed with protein, it keeps me full and satisfied until the kids are ready to take a lunch break. Plus it’s dairy-free, gluten-free, no-refined-sugar goodness that you can feel good about putting in your body.
The secret ingredient for #momlife? Cold-brew coffee. It’s like a Frappuccino…minus the icky chemicals and sugar bomb.
The next time your kids are up before dawn and you haven’t yet gotten a caffeine break, much less breakfast, get out your blender and give this one a whirl.
Wake-Me-Up Power Smoothie
Gluten-free | Dairy-free | Refined-sugar free
Ingredients
- 1 Banana (Frozen)
- 1/2 cup Plain coconut milk yogurt (substitute plain nonfat Greek yogurt if not making dairy-free)
- 1/2 cup Unsweetened vanilla almond milk
- 1/3 cup Strong cold brew coffee or cold-brew coffee concentrate (Trader Joe’s coconut cold brew concentrate is my summer favorite)
- 1/4 cup Gluten-free oats (Substitute regular rolled oats if not making gluten-free)
- 1 Tbsp Ground flax seed
- 1/2 tsp Cinnamon
- 1/2 tsp Vanilla extract
Instructions
-
Add all ingredients to blender.
-
Pulse to blend until smooth.
-
Serve over ice, or add ice cubes and blend again until frosty.
Enjoy it al fresco like I did, my moment of calm while overseeing the chaos. Or pour it into a travel mug and be off on whatever your day has in store for you next.
Cheers to Sunday Funday!
