Easy Frosted Monster Brownies

If you need a last-minute Halloween dessert, look no further than these Easy Frosted Monster Brownies. With candy eyeballs and spooky Halloween colors, they’re a crowd pleaser that you can throw together in under an hour of work. (Just allow some time in between for the brownies to cool.)

This recipe uses all store-bought ingredients for the quickest, easiest, less-mess preparation. There’s a time and a place for homemade brownies (or, um, my chocolate chip brownie torte) but two hours before a Halloween party is not that time.

Easy Frosted Monster Brownies

1. Start with your favorite box brownie mix and prepare according to package directions. I like the Ghiradelli milk chocolate mix, and I use two boxes in a 9×13 pan.

2. Allow brownies to cool. To expedite cooling, place pan into freezer.

3. Remove from pan and cut if desired. (I cut my pan into 4 large servings and frosted these 4 large brownies individually for an event.) Otherwise, frost entire pan as a whole and then cut into pieces when serving.

4. Put approximately 8 ounces of store-bought frosting (one half of can) into mixing bowl and add 1 tsp Electric Lime food coloring from the AmeriColor Electric Gel Paste Food Coloring Kit to obtain the vibrant Halloween lime green. (These are the same colors used to create the frosting for my white chocolate buttercream succulent cupcakes, to demonstrate the versatility of this coloring kit.) Mix on high speed with electric hand mixer until combined.

5. Add to pastry bag with Wilton No. 4B Star Tip. To pipe, apply gentle pressure and then pull away to create star shape. Repeat in lines if creating an all-green monster. If piping a green-and-purple monster, pipe lime stars randomly, covering approximately half the brownie surface.

6. In second mixing bowl, place remaining 8 ounces of frosting and add 1 tsp Electric Purple food coloring plus 1 drop Electric Blue food coloring. Mix on high speed until combined into vibrant Halloween purple.

7. Add to second pastry bag with No. 4B Star Tip. Repeat step 5 with purple stars, filling in all surface area until brownie is covered.

8. Sprinkle with your favorite Halloween sprinkles. I like the purple, lime green, and black nonpareils from the Wilton Halloween Sprinkles Mix.

9. Dot liberally with Wilton Mini Candy Eyeballs. As many as you want, until it looks sufficiently spooky.

10. Cut into individual pieces and serve.

Start to finish, including cooling time, this easy recipe took me about 2 hours — but actual hands-on time was about 40 minutes, including the piping. I was even able to shower and blowdry my hair (something that happens less than monthly) while I waited for the brownies to cool before frosting then.
