St. Patrick’s Day is one week away! Are you hunting for leprechauns in your house yet? My boys are obsessed, so we start now ( … and continue into April when I finally convince them to focus on Easter instead).
Ever since I introduced leprechaun bait snack mix, Easton has been all in on creating some elaborate Rube Goldberg-esque leprechaun traps with different kinds of baits. He’s got some big ideas, not necessarily grounded in reality or physics, but you gotta admire a kid for thinking big.
And sometimes as a mom, you have to just feed the obsession instead of crushing their spirits, so when he and I were home sick last week, we made a magically delicious twist on Rice Krispie Treats to use up the remainder of our Lucky Charms cereal. Spoiler alert: It’s exactly what you need to lure a leprechaun into a carefully crafted (read: a ton of masking tape) trap.
Frosted cereal with mini marshmallow bits instead of plain old boring Rice Krispies? Yes please. Extra marshmallow goo and sprinkles on top? You might have to fight off the leprechauns to snag some of this.
Lucky Charms Leprechaun Treats
A magically delicious twist on the classic Rice Krispie Treats
Ingredients
- 4 cups Lucky Charms cereal (marshmallows separated – about 3.5 cups cereal & 1/2 cup marshmallows)
- 3 Tbsp butter
- 3.5 cups mini marshmallows, divided
- Green sugar sprinkles
Instructions

Prepare 8×8 glass or metal dish by spraying liberally with nonstick cooking spray. Set aside.

In a large bowl, add 4 cups Lucky Charms cereal. Separate out Lucky Charms marshmallows (about 1/2 cup) and set aside.

In microwave-safe bowl, microwave butter and 3 cups mini marshmallows on High for 2 minutes.

Stir marshmallow mixture until smooth. If marshmallows are not fully melted, microwave additional 30 seconds and stir again.

Pour melted marshmallow mixture onto Lucky Charms cereal and stir well with silicone spatula, making sure all cereal is evenly coated.

Using wax paper, press marshmallow-coated Lucky Charms into prepared 8×8 dish.

In same bowl that marshmallows were melted in, microwave remaining 1/2 cup of mini marshmallows on High 30 seconds. Stir and spread melted marshmellow mixture over top of Lucky Charms treats.

Press Lucky Charms marshmallows into top of treats and sprinkle with green sugar sprinkles as desired.

Allow to set 30 minutes. Cut into 12 bars. Best if served the same day.
I’ll be honest … I wasn’t sure if classic Rice Krispie Treats could be improved upon. But now I know adding sprinkles takes them to the next level (plus frosted cereal and extra mini marshmallows, of course).
