A Classic Sleepover Snack Transformed
It’s our first official Spring Break, you guys. We’ve made it through seven months of kindergarten, and we’re in the end stretch now. Spring Break is the last hurrah until summer vacation.
Any working mom knows that a school holiday means one of two things: the stress of figuring out who’s going to care for your child while you are at work, or vacation days to take care of your kids yourself. We’re doing a mix of both — a few days in Spring Break camp and a few family fun days — to split the difference.
Easton is understandably a little bummed about not jetting off to Florida or Mexico, like some of his friends are. So my mama tribe and I decided to give our very first sleepover a shot this weekend. Yes, they’re only 6, but the moms are going to sleep over too.
If you think about it, it’s pretty genius: The wolfpack of kids entertains themselves while the moms get to unwind (with wine) and not have to worry about driving home.
At least that’s the plan for now. We agreed we’d all bring our pajamas and overnight things and play it by ear. At the least, the boys can change into pajamas and play until 10 pm before we all go home to sleep in our own beds.
I’ll keep you posted on how it turns out, but in the meantime, I’m sharing my sleepover snack mix: s’mores popcorn. S’mores are a classic but extremely messy sleepover treat. This snack mix takes the mess out of s’mores in a portable, eat-by-the-handful format. With a mix of Golden Grahams cereal and graham cookie snacks, plus kettle corn and two kinds of mini marshmallows, it’s all your s’mores dreams come true.

S’mores Popcorn Snack Mix
Sweet snack mix with grahams, chocolate, marshmallows and popcorn
Ingredients
- 2 cups Golden Grahams cereal
- 3 cups kettle corn popcorn
- 1 cup chocolate graham cookie snacks (like Teddy Grahams)
- 1/2 cup honey graham cookie snacks
- 1.5 cups mini marshmallows
- 1 cup white chocolate candy melts
- 1 cup chocolate candy melts
- 1/4 cup milk chocolate chips
- 1/4 cup Kraft Mallow Bits
Instructions

Line your workspace with foil or wax paper.

On the foil, spread Golden Grahams cereal, kettle corn, and two kinds of graham cookie snacks in a single layer. (Mix to combine uniformly.)

Add mini marshmallows on top of popcorn mix.

In small glass bowl, melt white chocolate or vanilla candy melts according to package directions.

Drizzle melted white chocolate all over popcorn mix. Make sure to drizzle edges too.

Sprinkle 1/4 cup milk chocolate chips on top before white chocolate begins to harden.

In same glass bowl, melt chocolate candy melts according to package directions.

Drizzle melted chocolate all over popcorn mix, including edges.

Sprinkle 1/4 cup Kraft Mallow Bits on top before chocolate begins to harden.

Allow to harden and dry completely, at least 30 minutes.

Break into bite-size clusters and store in airtight container. For best results, serve within 24 hours.
Recipe Notes
- You can buy kettle corn already popped like I did (I used Angie’s BOOMCHICKAPOP Kettle Corn), Or opt for a microwave kettle corn version instead.
- The Kraft Jet-Puffed Vanilla Mallow Bits are what bring the recipe together. These tiny marshmallow bits have the same consistency and taste of Lucky Charms marshmallows. Plus they are great in cookies and you can use them in hot chocolate too.
- If you don’t want to buy on Amazon, I found them in-store at Target (and the rainbow flavored variety at Wal-Mart).
- Don’t make snack mix more than 24 hours in advance because the mini marshmallows will start to harden. Store in airtight container.
Wish us luck tonight! With eight boys ages 3 to 6 in one basement, I have my doubts about how much sleep will potentially be taking place. And it’s true — sugaring them up with chocolate marshmallow popcorn isn’t going to help either. But what’s a sleepover if not a great excuse to stay up too late and eat too much junk food, only to create overtired, crabby kids the next day? I guess this will be the next rite of passage for parents and kids alike.
