It’s National Coffee Day and we’re out of the house before 10:00 am on a Saturday for a full day of fun: a fall play date at Cantigny and then two back-to-back kiddo birthday parties.
This mama needs coffee. But this mama also needs breakfast.
In honor of the unequivocal arrival of fall (it’s not even 55 degrees out yet), I blended up a healthy Pumpkin Spice Latte smoothie this morning for a delicious blend of caffeine and protein to get me through the whole day.
With cold-brew coffee, no added sugar, a healthy heap of fall spices, and surprise hidden cauliflower, this might be your new go-to fall breakfast. And you’re saving the money and the calories without that Starbucks stop.
Healthy Pumpkin Spice Latte Smoothie
Clean | No Added Sugar | High Protein
Ingredients
- 1 banana frozen
- 1/2 cup frozen riced cauliflower
- 1/2 cup plain nonfat Greek yogurt
- 1/4 pure pumpkin purée (not pumpkin pie filling)
- 1 Tbsp cashew butter
- 1 Tbsp ground flaxseed
- 2/3 cup cold-brew coffee concentrate or strong brewed coffee (cooled)
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
- 1 tsp pure maple syrup
- 1 tsp vanilla extract
Instructions

Add all ingredients to high-speed blender or food processor and blend.

Top with chopped pecans or maple granola and enjoy!
